Rum Cake

My neighbor Lori gave me a piece of this rum cake about 13 years ago. I'm not a cake person, I prefer pie. I had never had cake that was so damn yummy. I love this cake. I begged for the recipe and she gave it to me. Not only did Lori give me the recipe, she baked me another cake just for me and left it on my doorstep with the recipe. What a love!

Anyways, I've made this cake sooo many times I don't need the recipe anymore, but I thought I would share it with you because it is that good and it is easy! The Pioneer Woman has helped me learn how to bake from scratch, but this cake is sooo easy, why bother?
Start with a bundt pan and spray it heavy with PAM baking spray
Cake mix: 1 box super moist yellow cake, 1 small package of jell-o chocolate pudding mix (do not make, just pour into bowl) 1/2 cup oil, 1 cup water and 3 eggs.
1/2 cup of chopped nuts (your choice) + 1/2 cup mini chocolate chips, mix nuts and chocolate chips in bowl and spread on bottom of bundt pan.
The bottom of pan should look like this after putting nuts and chips in!
Mix the batter and pour over the nuts and chips, bake at 325 for 1 hour
This is the magic for the inside of the cake: 1 cup of butter (yes 2 sticks), 3 oz of rum and 1 cup of sugar
When the cake has only had 5 minutes left, go ahead and put ingredients on stove top and melt until it is a nice syrup. Do not cook too hot or too fast, it will turn into candy.
Pour butter/rum/sugar mixture into large measuring cup
Using a chopstick, poke holes into the bottom of the cake, just poke away!!
Pour the mixture into the cake, don't go too fast, let the cake absorb the syrup. Let the cake cool for about 25 minutes and then flip the cake onto its serving plate
All done! It is ready to enjoy!! Yummy!!

Rum Cake
1 box super moist yellow cake
1 small package choc pudding (Just pour into bowl, do not make!)
1/2 cup oil
1 cup water
3 eggs

Spray bundt pan with PAM baking spray
Chop up 1/2 cup of pecans and use 1/2 cup of mini choc chips, mix nuts and chips and pour into bundt pan, this creates the top of your yummy cake. Pour cake mixture over nuts and chips

Bake at 325 for 1 hour

Rum Glaze
1 cup of butter
1 cup of sugar
3 oz of rum

When cake is almost done, put ingredients on stove top and melt into glaze. Do not get too hot to fast or cook to long or you will make candy! Take off heat once it is all melted.

Poke holes into bottom of cake using a chopstick. Pour glaze into cake, slowly letting cake absorb all of it. Let cake cool for about 25 minutes and flip cake onto serving plate.

Leg pains

Erik has been waking up with leg pains lately. He wakes up in terrible pain and I have to rub them and I beg him to take some Tylenol, but at 1:30 a.m., he doesn't want it, he just wants me to rub. I sneak out of his room when he falls asleep. I crawl back into bed and find that most times I am wide awake. Ugh.
It's going to be a sleepy day. We have baseball for Erik tonight.
Erik is having a good time at T-ball, but Casey hasn't had the best experience. I'm glad he's played these last four years, but this may be the last. He's going to need to love a sport in order for the entire family to sacrifice our time and energy. I get the importance of learning teamwork and social skills-- but there a lot of choices to consider and I want Casey to have a taste of a lot of activities. 

I don't have any false beliefs that my sons will be professional athletes. I want to focus on his strengths. He has a great positive attitude. He listens to his coaches. He does what he is asked. He runs really fast. He is quick to smile and tell his teammates they did a good job. These personality traits will take him far.

Pedar and I didn't have much of a sports experience growing up and I'm pretty proud of what we continue to accomplish and how well we play with others. We are not going to spread our time crazy thin for sports. Time is so thin already. My family needs dinner together, walks around the block and hours of play in the backyard before anything else.

Ziplining fun in Lake Tahoe

We had the best time at Granlibakken's Tree Top Adventure in Lake Tahoe. We cannot wait to go again. Even our five-year-old had a great time. I wish we could go every day!

Walk a mile in heels

Yesterday, Pedar and over 600 men raised $240,000 for WEAVE. The boys and I cheered him on as he wobbled down Capitol drive.
He left the house a couple of hours before the race to meet up with his team. I stayed back with the boys and mowed a mile. Man we have a lot of lawn. I cannot wait to tear a lot of it out-- especially by he pool. 

I missed a fun brunch with my ladies, but fortunately I get to see them this Saturday!!

Thank you!

Curly makes everyday feel like my birthday. He loves me so much!!
I have had one of the best birthdays ever. I was spoiled and celebrated so beautifully. I feel loved and crazy optimistic about this coming year.

Birthday time!!


Our 4th Birthday
Birthdays are so different now. I'm still trying to recover from last night. I apologize to all the people that I owe calls to (Twanet, Carina and more!) We had two baseball games last night at 5:30 p.m., which means a MAD dash to get home, change clothes, rush to field, throw some food  at our faces (Nope, no time) and play ball. Got to fields, froze our butts off and watched baseball. Pedar stayed for rest of Casey's game--till 7:30 p.m. Ugh. Erik and I ran to store, since we have no food. Got food. Met Pedar and Casey at home. Ate quickly. Finished homework, bathed children and got them to bed, very late.

But here it is, my birthday. No time to pause or sleep in or take it slow. I am looking forward to the next 50 + years on this earth. I hope I get to continue singing, dancing, laughing, hugging and kissing for many more years.

I want to thank my Mom and Dad for making me. I want to thank my sisters for growing up in crazytown with me. 

I want to thank Pedar for choosing me at 21-years-old so I didn't have to deal with a bunch of a$$holes.

I love having 9 and 5-year-old sons. I found out ten years ago, just a bit before my birthday, that I was pregnant. Then, four years later, I received another birthday present.

 I love being married to my super hunky hubby. Thank you for the coffee and card in bed my love. I adore you.

I can NOW look back at my younger years and laugh more than I cry. Some of those years were not so fun, but they made me who I am today and I am grateful.

This past year has been so great. We moved. We traveled a bit. We've laughed and loved a lot. Life is good people. I continue to be so grateful for my friends and family that love  and encourage me.

I love you, Margery. I miss you. I cannot wait to see you again and hear your stories and laugh with you.

Tahoe Time

We drove up to Tahoe Thursday evening for two nights of family and fun. We enjoyed dinner at Sunnyside with Lisa, Megan, Mor-Mor and Pops.
On Friday evening, Janet and Bob arrived to the cabin. We celebrated Janet's birthday!
Lisa and Megan left Friday evening, but earlier in the day we walked down to Chambers to play at the beach. Megan was kind enough to carry Erik for a bit!
I can't believe little Megan is 17! I've been spending time in Tahoe with her since she was ten-months-old. I love you, Megan! I loved having some time to chat with you on our hike to the lake.

Lisa, Mor-Mor and Megan went ziplining at Granlibakken's Tree Top Adventure Friday evening. They had a really good time. We had reservations for the next day and just hearing about their fun made us so excited!!
Erik was so brave! Some of the rope courses were scary, but he did it and he loved it!! I can't wait to load the videos!!


We ALL had a great time and cannot wait to do it again!!
Before we left on Saturday, we created art in the front yard. We had a blast creating our rock art!!
